The Experience

SEM is the restaurant that quietly changed what ambitious cooking is allowed to cost in Lisbon. Chefs George Mcleod (New Zealand) and Lara Prado (Brazil) opened it in Alfama with a radical thesis: a single tasting menu, changing daily, built entirely from regenerative agriculture, zero-waste fermentation, and whatever the week's producers delivered. Eight courses, €45. A selected Portuguese wine pairing adds €50. That pricing would barely cover tip in most of the rooms this kitchen belongs next to.

The dining room is small and spare — open shelves lined with jars of ferments, preserves, vinegars, koji, and pickles that will appear on plates over the course of the evening. The aesthetic is closer to a Copenhagen test kitchen than a traditional Portuguese restaurant, which is deliberate. Mcleod and Prado treat the Lisbon region's terroir — its fish, its herbs, its seldom-used cuts and parts — with the same seriousness a Scandinavian chef would apply to a foraging larder. Nothing leaves the kitchen without being used completely. Carrot tops become oils. Fish heads become stocks. Wine that didn't sell becomes the next week's vinegar.

What the menu lacks in preview, it makes up for in intent. Diners choose to trust — and in return, get cooking that feels both experimental and profoundly grounded. The Portuguese wine list leans into small producers from the Douro, Dão, Alentejo, and the Azores, often names you won't see elsewhere in the city. Service is warm and informed, explaining provenance without turning the evening into a lecture. By the time coffee arrives, you will have eaten eight distinct expressions of Portuguese terroir you couldn't find anywhere else at the price, and probably at twice the price.

SEM appears in the 2026 MICHELIN Guide Portugal without a star, which remains surprising. For anyone who cares about where their food comes from — and for anyone who cares about getting a Michelin-level evening for the cost of a round of drinks at Silk Club — this is the most important table in Lisbon to book.
