In 2023, Central reached the summit of the culinary world — named the best restaurant on the planet by the World's 50 Best. Chef Virgilio Martínez had spent fifteen years working toward this moment, building a restaurant that was not merely excellent in the conventional fine-dining sense but philosophically original: a tasting menu that took the premise of Peru itself — a country of extraordinary vertical biodiversity — and turned it into a narrative of food.

The restaurant is set in a converted house in Barranco, Lima's most culturally layered neighbourhood, with a garden you walk through to reach the dining room and a rooftop herb garden that supplies several courses. The room seats just 44 guests — intimate by world-class standards — and operates with the quiet intensity of a place that knows exactly what it is. The walls are lined with clay pots from each altitude of the menu; the team explain each course with the scholarly fluency of people who have spent months developing it.

The tasting menu — called "Territorio en Desnivel" (Terrain of Altitude Differences) — is a sequential journey through Peru's vertical ecosystems. Courses bear the name and altitude of the landscape they represent: "Pacific Waters −20m," "Valleys and Volcanoes 650m," "High Altiplano 3,800m." Each uses only ingredients from that ecosystem, and many of those ingredients — purple mashua, paiche, sacha inchi — are unknown to diners from outside Peru. The menu changes every few months as the seasons and Martínez's research evolve.

The Experience

The menu runs 17 courses over approximately three hours. A non-alcoholic pairing is available — an extraordinary selection of fermented juices, botanical infusions, and traditional Peruvian drinks that is itself award-winning. The wine list focuses on Peru's emerging wine regions alongside a curated selection of Old World bottles. The service team are researchers and storytellers as much as they are waiters; expect detailed explanations of each ingredient, its origin, and its significance to the ecosystem it represents.
