Unique Restaurant earns its place at the top of Lalibela's casual dining hierarchy through sheer consistency and warmth. The ground-floor dining room is unpretentious — plastic chairs, laminate tables, Amharic football commentary on the television — but the cooking is earnest and the welcome genuine.

The injera here is made fresh daily with 100% teff, producing the authentic dark, spongy flatbread that serves as both plate and cutlery for the stews served atop it. The doro wat (spiced chicken stew) and tibs (sautéed beef with onions and green pepper) are the must-orders.

Fresh juice is a revelation — mango, papaya, avocado, and mixed fruit blends made to order from produce sourced in the market below. The avocado juice, thick and sweet, has been converting sceptics for years.

The macchiato served here — strong, short, sweet — follows the Italian colonial tradition filtered through Ethiopian coffee culture. It is among the finest in the region and costs next to nothing.
