Merriman's Kauai is a sophisticated, multi-level restaurant in Poipu offering locally sourced, regional Hawaiian dinners. Owner-Chef Peter Merriman has been a pioneer of sustainable and locally-sourced cuisine since opening the original Waimea (Big Island) location in 1988 and is widely credited as one of the founders of the 'Hawaii Regional Cuisine' movement. The Poipu location continues this tradition with over 90% of its ingredients being locally grown or sustainably caught.
The cuisine is Hawaii Regional Cuisine with deep Kauai-island sourcing. Signatures include a Kauai-fisherman tuna tartare; a slow-cooked Big-Island-pork belly with passionfruit; a wood-fired Kauai mahi-mahi with Hanalei-grown vegetables; a Kauai-pasture beef tenderloin; the famous 'Merriman's macadamia-nut crusted halibut'.
