Liberté is the kind of restaurant that appears on a Kaohsiung first-date list and then stays on it for years. The room is small — maybe sixteen seats — with exposed brick, Edison bulbs, and a long bar where the chef plates every course in full view. The menu is short, French-leaning, and rotates every few weeks; the natural wine list is one of the more thoughtful in the city.
Expect modern French plates executed with confidence: a raw fish course with citrus and olive oil, a duck breast with local orchard plum, a cheese plate that the kitchen curates itself. Portions are European, which is to say precise rather than generous — order four courses at least.
The two-tops along the front window are the seats to book. The room's lighting is already romantic; the pacing is already right; you only need to show up.
