The chef builds a seven-course progression from savoury-leaning opener to dense chocolate closer; each course is plated in front of you, usually with a quiet explanation of technique or ingredient.
The ingredients lean local and Asian: Pingtung cacao, Taitung citrus, Hualien strawberries in season, a house-churned ice cream course that uses Kaohsiung dairy. Pairings are non-alcoholic by default — teas, infusions, a few quiet cocktails — though the sommelier will build a wine pairing if you ask in advance.
