Tucked behind a sliding wooden door on a residential lane in Ōmachi, Ichirin Hanare is the kind of restaurant you walk past three times before noticing. Inside, a cypress counter seats ten. The chef works in silence for most of the evening, presenting course after course of meticulously composed bites: a single amadai fillet crisped on its scales, a barely-warm chawanmushi perfumed with matsutake, a hand-cut soba closer that the kitchen makes fresh between services.

The sourcing is almost absurdly local — vegetables from the Kamakura morning market, fish from Sagami Bay, tofu from a maker half a mile away. Nothing on the menu tries to impress by being expensive. It impresses by being exactly right.

This is a business-dinner counter in disguise. The space is small enough that two people can talk at a conversational volume without anyone eavesdropping, and the pace of an omakase leaves no awkward silences — there is always a new course to discuss.
