About Tonkatsu Kawakyu

Tonkatsu Kawakyu is one of the rare tonkatsu restaurants directly operated by a butcher — the Kawakyu meat shop next door has supplied the city with Berkshire (kurobuta) pork since the 1950s and opened the restaurant as its showroom kitchen in 1968. The connection is the whole point: the pork arrives at the kitchen the morning it's butchered, the cuts are individually selected for fineness of the marbling, and the chef knows the producer of every leg he fries.

The signature is the Rosu-Katsu — a thick pork loin cutlet, lightly breaded with house panko, fried slowly at low temperature for the first half of the cook then briefly raised to high heat to crisp the breading. The technique gives a uniformly cooked, juicy interior and a crisper-than-average exterior. A standard set runs ¥1,800; the premium hire-katsu (tenderloin) is ¥2,400; a tasting set with both cuts and a small katsu-don is ¥3,200.

The room is small and traditional — eighteen seats at a counter and four small tables, white-tiled walls, the kitchen visible at the back, a vintage 1970s sign over the entrance. Walk-ins outside lunch peak (12-1:30) work; the queue at peak runs twenty to forty minutes. English menus are present and the staff speak basic English; the picture-led format makes ordering trivial.

Tonkatsu Kawakyu is on Japan's official Top-100 Tonkatsu list (the country's most-cited tonkatsu ranking) and has been continuously since the list's first publication in 2005. The restaurant is the cleanest possible introduction to Kagoshima Berkshire pork and is one of the genuine cheap-eats of southern Kyushu — equivalent quality at a Tokyo Hokuto or Tonki branch would cost half again as much.
