The Room
Russell Roegels opened the West Houston barbecue counter in 2014 — Roegels operating one of Houston's most-considered Texas-style barbecue programmes. The pit is post-oak fired, the brisket programme runs a fourteen-hour smoke, and Texas Monthly has assigned a Top 50 Texas BBQ designation through multiple cycles.
The format is intentionally casual — counter ordering, picnic-table seating, paper trays, no reservations. The line forms by 10:45 on Saturdays.
The Food
The brisket is the order on every visit. The jalapeño-cheddar sausage, the pulled pork, and the smoked turkey run as the menu's centre. The sides handle the by-the-pound order rounding-out.
Beer programme runs Texas craft. Service is counter-and-runner.
