The Room

Hidden Omakase opened in the Galleria in 2021 — a twelve-seat hinoki counter tucked behind a sushi-shopfront entrance, with two seatings nightly at $200 per seat. The fish is flown in twice weekly from Toyosu in Tokyo. The format is intentionally classic-edomae: no menu, no music, the chef narrates each piece.

Eater Houston named Hidden Omakase one of the year's best omakase counters in 2022. The booking window is thirty days; weekend seatings tighten to under sixty seconds at release.

The Food

Eighteen to twenty-two courses across roughly two hours. The structure is classic edomae: a small opening series of cooked or cured pieces, a vegetable interlude, twelve to fourteen pieces of nigiri at the counter's pace, a tamago, a hand roll, a small dessert. The fish runs the seasonal Toyosu rotation.

Sake programme is one of Houston's deepest. The pairing flight runs $85 per person. Service is the chef and one assistant.
