The Verdict

ZUMA Hong Kong is the Landmark location of Rainer Becker's global izakaya institution, and it operates at the level of energy and execution that has kept the brand relevant across its many international outposts. The robata grill is the centrepiece of the format: skewers, whole preparations, and grilled fish prepared over binchotan charcoal with a precision that the izakaya tradition demands and that Zuma's kitchen has maintained as the brand expanded. The sushi counter, visible from the dining room, produces rolls and nigiri of genuine quality alongside the grill programme.

The izakaya sharing format — ordering from across the menu, dishes arriving as they are prepared — creates the kind of animated table dynamic that business groups and celebration parties both benefit from. The signature dishes have been on the menu since the London opening and remain there because they are consistently excellent: the miso-marinated black cod, the robata prawns with ponzu butter, the spicy tuna rolls assembled at the counter. The dessert programme, which includes a Japanese whisky soft-serve that has become the signature closing note, extends the Japanese spirit tradition to the final course.

Zuma's Central location at the Landmark provides one of the most accessible luxury addresses in Hong Kong — the building's retail level connects directly to multiple MTR exits and the Mandarin Oriental hotel, making the reservation practicable for guests arriving from anywhere in the city. The bar operates independently of the restaurant and provides one of Central's best selections of Japanese whisky and sake for guests who want to extend the evening or begin it before the table is ready.
