About Noi by Paulo Airaudo

Noi sits on Podium Level 5 of the Four Seasons Hong Kong in Central, an intimate counter-led room designed by AB Concept. Its name means ‘we’ in Italian, and it is the Hong Kong project of Argentine chef Paulo Airaudo, whose Geneva flagship La Bottega earned its own stars. Noi opened in November 2022 and climbed fast, holding two Michelin stars in the 2025 Hong Kong selection.

The format is an Italian omakase — a set tasting menu that turns over every two to three months — with a strong seafood slant and produce flown in daily from Japan. For Hong Kong's other counter-led tasting rooms, compare the three-star Italian 8½ Otto e Mezzo Bombana and the modern Mono.

The Kitchen

Airaudo and head chef Luigi Troiano build a ten-plus-course progression that nods to Italian tradition but updates it with modern plating and technique. The dish guests remember is a silky egg custard poured with an Ibérico ham consommé that carries a faint smokiness; from there the menu moves through Japanese seafood, house pasta and a tightly choreographed run of small, precise plates.

It is a set menu rather than an a la carte, priced in Hong Kong's top fine-dining tier, with drinks pairings starting around HK$1,180. Book the omakase and let the kitchen lead — the argument only lands across the full sequence.

The Room

The room is small and counter-focused, finished in marble and warm wood, with most seats facing the open pass. Service is detailed and unhurried, pitched for a single evening rather than a quick turn. It is built for an occasion: dress up, settle in, and watch the kitchen work the counter in front of you.

Best for an anniversary or a deal worth marking

Noi suits an anniversary or a deal worth marking — the counter intimacy, the two-star cooking and the set-menu pacing make it a milestone room. For other Hong Kong tables, see Ta Vie or browse the Italian guide and the tasting-menu picks.

Not for

Not for a casual walk-in or a quick bite — this is a small, set-menu omakase counter with top-tier prices and a single unhurried seating each night.
