Peter Cuong Franklin took the city's first Michelin star at Anan, a narrow room above the Ton That Dam wet market at 89 Ton That Dam in District 1. The menu reworks street food into fine dining, the caviar-topped banh xeo and the much-photographed Saigon burger among the signatures. A tasting runs roughly $80 to $150 a head. It opens for dinner from 5pm Tuesday through Sunday and is dark on Mondays, so Sunday is a working night here. Book two weeks out; the small room fills.
