Hank's Fine Steaks & Martinis opened in 2001 inside Green Valley Ranch Resort & Spa, the original Station Casinos flagship in the Green Valley neighbourhood of Henderson — twenty minutes south-east of McCarran and a fifteen-minute drive from the southern end of the Las Vegas Strip. The dining room is the most carefully composed in Henderson: dark wood panelling, ruby-tufted leather banquettes, brass-finish chandeliers, an open exhibition kitchen at the back, and a centerpiece zinc-topped bar dressed for the property's signature martini programme. Seventy-eight covers across the main room and a private wine cellar that books up six weeks out for corporate dinners.
Anthony's Prime Steak & Seafood
Anthony's Prime Steak & Seafood occupies the corner of the M Resort & Casino at the southern edge of the Las Vegas Strip — twelve miles south of the Bellagio and the city's first serious dining destination on the way back from any Henderson business meeting. The dining room is a glass-walled exhibition format with the open kitchen as the room's visual centre, lit-from-below quartz tables, a black-leather banquette wall, and a long outdoor patio that opens for dinner service April through October with a clear sight line to the Las Vegas Strip's skyline. About 120 covers across the main room and the patio.
Hayworth
Hayworth opened in late 2024 on West Horizon Ridge Parkway in the Green Valley grid of Henderson, the project of chef Alex Reznik — a Las Vegas industry veteran whose CV runs through Daniel Boulud at Wynn, Mr Chow at Caesars Palace, and the original Border Grill at Mandalay Bay. The room is the polished neighbourhood-fine-dining format that Henderson did not previously have: dark velvet banquettes, brushed-brass fixtures, a long marble bar that takes walk-ins, an open kitchen pass that anchors the back wall. Boom Bang Fine Foods & Cocktails
Boom Bang Fine Foods & Cocktails opened on South Valle Verde in 2022, the first solo venture of chef-owner Elia Aboumrad-Page — Mexico-City-born, Bravo Top Chef alum, and notably the first female sous chef Joël Robuchon ever hired (at the original L'Atelier de Joël Robuchon in Las Vegas). The room is a small, intentionally playful neighbourhood format inside a Green Valley strip-centre: gold-leaf wallpaper, fringed velvet banquettes, an open kitchen pass behind a marble counter, and a six-stool cocktail bar that takes walk-ins. Ventano Italian Grill & Seafood
Ventano Italian Grill & Seafood occupies a hillside corner on South Arroyo Grande Boulevard in the McDonald Ranch grid of Henderson, opened in 2003 by chefs Arnauld Briand (a Strip and Wynn veteran) and Carmine Vento. The dining room is a comfortable Italian-tradition format — terracotta-tile flooring, exposed-beam ceilings, an open oyster-bar marble counter at the entrance — but the room's headline is the outdoor patio, which sits at the highest elevation in central Henderson and looks west across the Las Vegas Valley with the Strip skyline lit at the centre of the view. The patio at sunset is the single most romantic dining table in the Greater Las Vegas area.

The Dining Culture
Henderson's dining culture has matured into the grown-up alternative to the Las Vegas Strip. Twenty minutes south-east of McCarran, the city's two casino-resort steakhouses (Hank's at Green Valley Ranch, Anthony's at the M Resort) sit alongside a tightly packed cluster of chef-driven independent rooms in the older Green Valley and Whitney Ranch grids. The signature of Henderson cooking is restraint — Wine Spectator–award wine programs, USDA Prime and Wagyu beef sourcing, and an Italian and Pacific-seafood depth that the Strip resorts charge twice as much for. The city draws an older, professional dining crowd that has graduated from the Strip's volume kitchens.
Best Neighbourhoods
Green Valley Ranch, anchored by the Station Casinos resort and The District open-air mall, holds the most concentrated cluster — Hank's, Hayworth on Horizon Ridge, Boom Bang on Valle Verde, and a dozen serious second-tier rooms within a five-minute drive. The M Resort campus at the southern Strip's edge holds Anthony's Prime Steak & Seafood with its view back to the Las Vegas skyline. Lake Las Vegas, fifteen minutes east, holds the Hilton resort kitchens and Ventano's Italian Grill on Arroyo Grande with the most striking dining-room view in the city. Anthem and Inspirada to the south are the newest residential growth and bring the chef-driven independents.
Reservations & Practical Tips
Hank's and Anthony's book one to two weeks ahead for weekend prime-time; weekday is usually available within a few days. Hayworth and Boom Bang book a week out for weekends — both are closed Mondays. Ventano takes same-day reservations through OpenTable across most of the year. Uber and Lyft cover Henderson densely; driving from any Strip resort is fifteen to twenty-five minutes off-peak. The Henderson airport (HND) takes private aviation. Note that Hank's at Green Valley Ranch was temporarily closed during a 2025 resort renovation — verify the room's status before booking long-distance.
Dress Code & Tipping
Hank's and Anthony's are smart — jackets welcomed at both, not strictly required. Hayworth and Boom Bang are smart casual at the upper edge. Ventano runs comfortably casual on the patio, smart inside. Tipping at the steakhouses runs 20-22% on a serious bill; the sommelier teams at Hank's, Anthony's, and Ventano all carry deep wine-list programmes that reward direct conversation. Las Vegas's resort-casino service standard — fast, polished, English-fluent — applies across Henderson's resort rooms; the independent kitchens run at a less choreographed but still serious pace.
