"The power table of Healdsburg — Michelin recognized, Wine Spectator acclaimed, and run by brothers who understand that great wine country dining is persuasive without being showy."
About Valette
Chef-owner Dustin Valette and his brother Aaron transformed what was once a saloon on Center Street into wine country's most convincingly brilliant fine dining destination. The achievement is not merely culinary — it is atmospheric. In a town where restaurants can lean into their wine country setting to compensate for what's happening in the kitchen, Valette does the opposite: it creates a warm, neighbourhood-feeling room that would succeed anywhere, then fills it with cooking that is unmistakably rooted in the Sonoma County landscape.
The menu changes weekly, structured around the produce of the extraordinary network of farmers, ranchers, and fishermen that Dustin has spent years cultivating. House-made charcuterie featuring estate-grown herbs arrives as an amuse, establishing a tone of generous abundance before any orders have been placed. From there, the menu moves through preparations that honour French technique without abandoning California lightness: duck breast accompanied by Dry Creek Valley cherries, halibut with Bodega Bay sea beans, preparations of local lettuces that make a simple salad feel like an act of considered artistry.
Aaron Valette's wine program is one of the most thoughtfully assembled in Sonoma County. It showcases obscure local producers — small-production Dry Creek Zinfandel, Alexander Valley Cabernet, coastal Pinot Noir from producers whose bottles rarely leave the county — alongside Burgundy legends and well-chosen Austrian whites that function as perfect counterpoints to the kitchen's preparations. The Wine Spectator Award of Excellence reflects the list's quality; the depth of the by-the-glass program reflects Aaron's understanding that not every table wants to commit to a bottle.
The former saloon's bones remain visible in exposed brick, dark wood, and a narrow bar that fills with locals after service. The dining room proper is intimate without feeling cramped, dimly lit in a way that flatters everything — the food, the wine, the conversation, the guests. Valette understands what fine dining rooms too often forget: the space should be in service of the experience, not the other way around.
Best Occasion Fit
Valette is the Healdsburg restaurant where business dinners succeed most reliably. The combination of Michelin recognition, Wine Spectator status, and Aaron's ability to guide a wine selection that becomes a conversation topic in itself creates exactly the conditions under which deals close. The room is quiet enough for confidential conversation and impressive enough to communicate to a client that they were worth the effort of bringing somewhere genuinely exceptional.
For birthdays, Valette's private dining room accommodates groups of up to sixteen and can be configured around a set menu negotiated with the kitchen in advance. The service team at Valette understands how to calibrate attention — present when needed, absent when the conversation demands privacy. It is the most thoughtful service team in Healdsburg outside of SingleThread.
