The Family Business

Carbone's is the kind of restaurant the United States does not really build anymore — a multi-generation family Italian dining room, opened by two brothers in 1938, still run by their grandchildren, on the same block of the same avenue in the same city, through a world war, a pandemic, and a century of Italian-American assimilation. What began as a small Franklin Avenue lunch counter called Southern Plantation in 1938 — serving fried chicken, because early-20th-century Connecticut was not ready to accept two brothers openly cooking their own family's Italian food — is today Hartford's most ceremonial restaurant.

The current generation of Carbones took the reins in 1961 and began the slow conversion to the Italian menu the family had wanted to serve all along. The dining room has been updated, but not modernized to the point of losing its soul: cream walls, dark wood wainscoting, banquette seating, Italian still-life oil paintings, a front bar that has mixed tens of thousands of Sazeracs and Negronis, and a dining room staff that still wears tailored jackets and actually knows how to carve and flambé at the table. On a busy Saturday night, the kitchen runs bananas foster for at least half the dining room.

The food reads as a greatest-hits of mid-century Italian-American with genuine refinement applied: housemade meatballs with roasted peppers, veal osso buco, grilled octopus with fingerling potatoes, lobster in saffron pappardelle, a tableside-prepared Caesar, and a veal chop that is the single most photographed entrée on Franklin Avenue. The wine list is serious on Tuscany and Piedmont, with a well-kept Amarone vertical and a Barolo section that several local sommeliers shop out of for their own home cellars.
