The room is a modern Mexican one: warm woods, low hanging pendant lamps, an enormous back-bar stacked three deep with tequila and mezcal, and a dining room that buzzes at exactly the register a Friday night in a small American capital city should. The restaurant bills itself — with some justification — as the largest tequila bar north of the Rio Grande, and whether or not that claim survives a truly rigorous audit, the list is genuinely serious: silvers, reposados, añejos, extra añejos, and a deep mezcal section that rewards a customer who lets the bartender choose.

The kitchen's ambition is what separates Agave from a typical Mexican-American restaurant. Tableside guacamole, made from Hass avocados, cilantro, lime, and jalapeño at the table — with the restaurant's signature serrano heat dialed to order. Mango-glazed chicken skewers.
