About Bianc
Bianc is the Mediterranean one-star in the HafenCity district, opened in 2018 by Italian-born chef Matteo Ferrantino (previously head chef at Vila Joya, the two-star on the Algarve). The Michelin star arrived in 2019 and has been continuous since. Ferrantino's cooking is not the Italian-tourist Mediterranean of Hamburg's older generation; it is the Portuguese-Andalusian-Sicilian vocabulary he developed over eight years at Vila Joya, translated to the North Sea's supply chain.
The tasting menus are 5, 7, and 9 courses at €165, €195, and €245 respectively. A typical menu: hand-dived Galician scallop with almond gazpacho and Iberian ham broth; smoked North Sea eel with confit tomato, basil, and a tomato-water espuma; housemade ravioli of turbot with seafood bisque and sea samphire; slow-cooked Charolais short rib with black garlic and coffee jus; and a dessert flight that includes a signature Sicilian cannolo with lemon-verbena gelato. The Mediterranean palette is clear but the ingredient sourcing is North-European, and the technical level is high enough that the kitchen has been regarded as two-star-capable for two years.
The room is HafenCity modern — glass walls, a dark-walnut floor, a terrace facing the Sandtorhafen — and smaller than The Table or Haerlin, with only 32 covers. The service is the warmest Michelin service in the city; Ferrantino himself works the dining room daily. The wine list leans Italian and Portuguese but carries a credible German Riesling and Pinot Noir selection. Bianc is the Hamburg Michelin dinner that feels least like a Michelin obligation.
Why It's Perfect for First Date
For a First Date: Bianc's HafenCity terrace in summer and the warm Italian-led service inside year-round make it the single warmest Michelin first-date room in Hamburg. The menu is flexible (5, 7, or 9 courses) so a date can be moderated to the correct pace; the prices are the most approachable of the city's starred tables; and the HafenCity setting with the Elbphilharmonie lit in the distance is genuinely romantic after sunset. Book the 19:00 seating for golden hour.
