Arco by Paco Pérez — Gdańsk
On the 33rd floor of the Olivia Star — northern Poland's tallest building — Arco by Paco Pérez has established itself as the defining fine dining address not just in Gdańsk but in Polish gastronomy as a whole. The Spanish chef and his team apply the technical precision of Catalan-Mediterranean cuisine to the finest Baltic and Polish produce: Baltic fish treated with the same respect as Iberian seafood, Polish game elevated to tasting-menu theatre, and a wine list of nearly 500 selections that suggests a sommelier team that takes its work as seriously as the kitchen takes its.
The dining room is conceived as a horizontal extension of the sky — floor-to-ceiling glass on three sides gives every table an unimpeded view of Gdańsk, the Tri-City coastline, and the Baltic Sea stretching to the horizon. On a clear evening, watching the sun descend over the water while working through a tasting menu is an experience that very few restaurants anywhere can replicate. The room seats perhaps sixty, with the harp occasionally playing in the background — an extravagance that would seem absurd elsewhere but here feels consonant with the ambition of everything around it.
The cooking is underpinned by Polish produce but driven by Spanish flavours: fermented Baltic herring with a piperade of roasted peppers, Kashubian duck with a sauce built from Spanish cherry vinegar, and the restaurant's signature prawn dish that is as close to Mediterranean as the Baltic coast gets. The tasting menu runs to eight to ten courses and changes with the seasons; the à la carte is available but feels like an understatement in a kitchen of this ability.
Arco's Michelin star, first awarded for 2024 and retained since, is Poland's most significant fine dining recognition, and the restaurant carries that distinction with the grace of a kitchen that was always cooking at this level — the star was confirmation rather than transformation.
Best Occasion Fit: Impress Clients
No restaurant in Poland makes a more powerful statement than Arco: the city below, the sea beyond, one Michelin star on the table, and a wine list that signals genuine sophistication. For international clients particularly, the combination of setting and cooking communicates something important — that the person across the table operates at the highest level. The private dining rooms on the same floor make it equally suitable for confidential business dinners.
