About Aqua Forte
Aqua Forte is the fine-dining restaurant of chef Roberto Vicario — the Italian chef who has, over a decade, built a three-part Fort Italian group (Aqua Forte for fine dining, Aqua Forno for pizza, Aqua Pizza for the casual daytime). Aqua Forte sits at 62 Leyn Baan and is the Fort's Italian benchmark: genuine, chef-owned, with a kitchen philosophy built on sourcing from Italy directly.
The dining room is a restored colonial house with terracotta-tiled floors, white-plastered walls, and a small internal courtyard that seats ten in the open-air section. Indoor capacity is about forty across tables of two and four. The cooking is classical northern Italian — the handmade pasta is made fresh daily, the bread is house-baked, the ingredients (flour, cheese, cured meats, some of the vegetables) are imported from Italy to maintain the kitchen's preferred standards.
Signatures include the pan-fried octopus, the Australian beef striploin with Tuscan salt crust, and the low-temperature lamb rack served with Tuscan herbs. The dessert programme is serious: illy espresso tiramisu, Sicilian cannoli made to order, homemade sorbets, and an in-house gelato programme that runs twelve flavours. The wine list — about eighty bottles, weighted almost entirely to Italian producers — is the deepest Italian list in Sri Lanka.
Service is family-warm in the Italian chef-owned tradition. Chef Roberto is usually in the kitchen and visits the room between main and dessert. Reservations are essential in season.
Why It's Perfect for First Date
Aqua Forte is the first-date room in Galle Fort. The courtyard two-top at 8 PM, the tasting-pasta selection, the Italian wine programme, the unhurried chef-owned pace — every element is calibrated. For a proposal, the back corner of the main dining room is the quietest. For a close-a-deal dinner the full-table Italian service and the natural wine programme signal 'I care about food and I am paying for your time'.
