About Sciabola

Sciabola is the restaurant of the boutique Hotel St. Mauritius, a few streets back from the seafront on Via XX Settembre in central Forte dei Marmi, the chic Versilia resort on the Tuscan coast. The dining room is bright and colourful, more an intimate hotel salon than a beach trattoria, and it has become one of the most serious kitchens in a town better known for its summer crowds than its cooking.

For the resort's other notable tables, compare the one-star Lux Lucis at Hotel Principe, the long-running Lorenzo or the seasonal La Magnolia at Hotel Byron.

The Kitchen

Chef Alessandro Ferrarini cooks a modern Italian menu rooted in the Versilia's seafood, the same hand that earned a Michelin star at Franco Mare in Marina di Pietrasanta in 2021 before he brought sous chef Daniel Fantinato and part of his team here. Signatures lean on the sea: anchovy-butter ravioli with bread and raisins, and a Mediterranean-style sea bass with cherry tomatoes, olives and capers. Two tasting menus anchor the offer — the six-course "Emozioni dal Mare" at €90 and the nine-course "Viaggio nel Gusto" at €110 — with à la carte primi around €24–30 and secondi €26–35.

The Room

The room seats a small number, in keeping with the boutique hotel around it: vivid colour, careful lighting and unhurried, attentive service. It is a dressed-up dinner rather than a casual one — the kind of table you book for the cooking, not the scene — and the intimacy makes it well suited to a quiet celebration away from the beach clubs. Book ahead in the high summer season, when Forte dei Marmi fills.

Best for Anniversary

An intimate hotel dining room and a chef-driven tasting menu make Sciabola a memorable anniversary dinner in Forte dei Marmi. The setting and the seafood menus also suit a considered proposal, or a refined first date away from the resort crowds.

Not for

Not for families after a casual beach lunch or diners on a budget — this is a dressed-up, chef-led tasting room with high-season prices, built for a slow seafood dinner rather than a quick bite.
