About La Chèvre d’Or
La Chèvre d'Or — the Golden Goat — has been the dining flagship of the Relais & Châteaux hotel of the same name since 1953 and has held two Michelin stars without interruption since 1991. The dining room sits at the clifftop edge of the medieval village, with a terrace that drops 427 metres down to the Mediterranean. The view, on a clear summer evening with Cap Ferrat reflected in the sea below, is the Côte d'Azur in its most concentrated form.
Chef Arnaud Faye runs a tasting-menu kitchen of unusual restraint and Riviera-grand polish. Langoustine carpaccio with caviar and lemon zest; turbot poached in vermouth with fennel and saffron; pigeon roasted with cep and a Madeira jus; Provençal lamb with confit garlic and black olive; a soufflé Grand Marnier carried table-side. The pacing runs three hours for the nine-course; two hours twenty for the six.
The wine list is among the most serious in Provence. Sommelier Frédéric Woelffle commands more than 1,800 references with vertical depth in every Bordeaux classed growth and serious Burgundy cellar, a complete Provence and Languedoc bench, and a Champagne programme — old Salon, Krug Clos d'Ambonnay, vintage Dom Pérignon — that the Monte Carlo casino restaurants would respect. The pairings on the tasting are best-in-class.
Service is multilingual, formal in the Relais & Châteaux register, and runs the meal with the Loire-and-Provence-trained precision the room demands. La Chèvre d'Or is a destination dinner — guests fly in from London, Geneva, Milan and Hong Kong for it — and the room is sized to match the occasion. Forty covers, white linen, the Mediterranean in every window. There is no comparable proposal dinner on the eastern Riviera.
