About Degust'AR

Degust'AR is the dining room of the M'AR De AR Aqueduto, the only five-star hotel inside the walls of Évora's UNESCO old town. It occupies the ground floor of the former Palácio dos Sepúlveda, a 16th-century house with horseshoe arches, vaulted ceilings and the odd surviving fresco. The setting does a lot of the work; the kitchen does the rest.

The Kitchen

Chef António Nobre, who has Alentejo roots, builds the menu from the region's own larder and pushes it gently toward the wider Mediterranean. Coriander, mint and oregano run through the plates; the sharp acidity of Alentejo bread, the rustic weight of slow-cooked meats and the freshness of river fish anchor them. The tasting menu starts at roughly EUR 44 per person, with a longer six-course version paired with regional wines. À-la-carte lunch and dinner are also served.

The Room

The room is the quietest kind of luxury: thick palace walls, horseshoe arches and vaulted stone keep it cool and hushed, candle and lamp light keep it intimate. Tables are well spaced and the service is unhurried and formal without being stiff. In warm months a terrace opens by the old aqueduct that gives the hotel its name.
