The Review

Dani García held three Michelin stars at Restaurante Dani García in Marbella and, in 2019, astonished the Spanish culinary establishment by closing the restaurant the day he received the third. His thesis was simple: fine dining at that level was crushing his ability to cook freely. The Smoked Room concept — born in Madrid in 2020 — was the answer. Fourteen seats around a single crescent table. One kitchen, one fire, one menu. No à la carte. No compromises. The Madrid flagship earned a Michelin star within a year of opening. The Dubai opening, at The St. Regis Gardens on Palm Jumeirah, did it in six months.

The room is the reason. Designed by Astet Studio, the space reads as a cross between a black-box theatre and an Andalusian smokehouse: charcoal-coloured walls, mirrored ceilings above the cooking station, automatic touch-activated doors that open as you approach. A mini-maze of corridors delivers you into a single semicircular dining room where fourteen guests face a live open-fire station and a forged-steel grill. Mirrors above the chefs let you watch every movement in the kitchen from any seat. The namesake smoke — aromatic, constant, never overwhelming — defines the air.

The eleven-course tasting moves through sea, earth and fire in a deliberate arc. García has brought his signature pieces from Marbella and Madrid and added Gulf-sourced seafood that responds to the Palm's proximity to the Arabian Gulf. The sea cucumber carbonara — a dish that reads surreal on paper and inevitable at the table — is the meal's defining mid-point. Dessert is delivered in a separate amber-lit dessert room, an atmospheric coda that resets the palate before the evening closes. The burnt pumpkin purée with mandarin sorbet is a dish I would order anywhere, at any price.

The tasting is priced at approximately AED 1,300–1,550 per person with wine pairings from AED 900. Smoked Room is open Tuesday through Sunday, dinner only, with two seatings from 6:30pm and 9:15pm. Reservations are taken through the Grupo Dani García booking system or by phone on +971 4 453 7548. In June 2025 the room was named to the Prix Versailles list of the world's most beautiful restaurants — the citation is earned.

Best for Proposal

The combination of a semicircular counter, low light, mirrored ceiling, and the rhythm of the fire makes Smoked Room one of the most atmospheric proposal rooms in Dubai. The room is intimate enough that the chefs will clock a special occasion; request the far-left or far-right corner seat at booking and you'll have partial visual privacy despite the shared counter. The dessert room — the second act of the meal — offers the cleanest moment for a ring: quieter lighting, fewer guests, and the natural pause between savoury and sweet that service provides. Palm Jumeirah also offers a straightforward post-dinner promenade along the St. Regis Gardens pool deck if you want to extend the evening.

Signature Dishes

The menu is fixed as a tasting but rotates in sections. Across every service, several dishes anchor the experience. The sea cucumber carbonara — a García classic that transforms an unloved protein into something extraordinary through 48-hour preparation and an egg-yolk emulsion — is typically the mid-meal signature. The Josper-cooked red mullet with its own liver sauce, served whole and deboned tableside, is the menu's most technically impressive plate. The chef's team also runs a prime-cut option — typically Galician rubia gallega beef aged in-house — served with bone marrow and a smoked shallot reduction that reads as both Spanish and Emirati at once. Desserts — burnt pumpkin, citrus granita, a final cheese course matured in-house — close the meal in the separate dessert room.

What to Know Before You Go

Smoked Room seats only fourteen people per service and is typically booked three to four weeks in advance. The dress code is smart elegant — jackets not required, but no shorts or flip-flops, and the venue enforces this. The restaurant sits behind sister restaurant Leña at The St. Regis Gardens on Palm Jumeirah; navigate through Leña's entrance and follow signage. Valet parking is complimentary. Dietary restrictions are accommodated with 48 hours' notice; a pescatarian version of the tasting is available but vegetarian substitution is limited. Minimum age is 12.
