Pierchic extends from the private beach of Jumeirah Al Qasr on a wooden pier that reaches into the tranquil waters of the Arabian Gulf. The approach itself — walking along the illuminated pier at night, the warm Gulf air, the Burj Al Arab glowing white in the distance, the restaurant at the end of the jetty suspended above the water on both sides — is a choreographed entrance that no urban restaurant can replicate. By the time you are seated at a table with the Gulf below you and the Burj Al Arab directly ahead, you are already inside one of the most romantic dining experiences on Earth.

The kitchen is led by Chef Beatrice Segoni, who has built a menu that honours Italian tradition without freezing it in amber. The emphasis is on the sea — the crustacean platter, a landmark preparation of lobster, king prawns, and crab served cold, is one of the most beautiful sharing dishes in Dubai. Seared king scallops with foie gras is a pairing of unusual confidence that Segoni handles with precision. Gin-and-tonic-cured salmon with dill pollen and crispy rice is the kind of dish that makes critics reach for vocabulary they don't normally use about seafood. The pasta is made in-house; the risottos are correctly made; the wine list is Italian and ambitious, with Barolo and Soave alongside Champagne for those who arrive intending to celebrate.
