The Review

Eauzone has been the romantic reservation in Dubai since the One&Only Royal Mirage opened in 1999. The room — if you can call it that — is a series of low-slung majlis pavilions set over mirrored pools of black-tiled water, canopied by the resort's signature date palms, lit at night by hundreds of candles and hurricane lamps. You arrive by walking across a narrow causeway. You are seated on a bed of cushions, or at a low round table with rope-backed chairs. And then the dusk comes down over the Arabian Sea, which is fifty metres away through the palms, and whatever you were thinking about before you arrived becomes immediately less important.

The cuisine is pan-Asian by design, which is usually a warning sign. At Eauzone it works because the kitchen has been refined over two decades by chefs who understand that this kind of setting benefits from precise, clear flavours rather than overwrought ones. Sushi and sashimi are competent. The dim sum — particularly the lobster and prawn dumplings, and the truffle siu mai — are the best on the menu. Black cod miso gets its obligatory appearance. Wok dishes are generally strong; wagyu rib-eye with black pepper is the non-negotiable order for a carnivore's proposal.

The restaurant's true signature dish is not on the menu. Ask the concierge at the resort, or the team at Eauzone directly, about private proposal set-ups. For an additional charge (roughly AED 1,500–4,000 depending on the package) you can secure one of the four "floating" majlis tables on the outermost edge of the pool, decorated with rose petals, candles, and a sign of your choosing. The restaurant arranges photographers discreetly. Dubai proposals have been made here by several of the country's most-recognised couples. The team is excellent at keeping the surprise.

Dinner for two, ordering considered and drinking moderately, lands between AED 600 and AED 1,200. The food is not the best Asian cooking in the city — Hakkasan, Zuma, and Nobu all win that contest — but the ambience is unrivalled, and the pairing of good-enough cooking with unforgettable setting is, in the proposal category, the correct trade.

Best for Proposal

Eauzone is, by most informed reckonings, Dubai's number one proposal restaurant — ahead of the tower-top options, ahead of the desert set-ups, ahead even of the other hotel-resort romantic rooms. The reasons are specific. The low light makes every guest look better than they will at any other table. The water both amplifies candlelight and dampens ambient sound, creating an acoustic bubble that permits a private conversation two metres from another couple. The staff are experienced enough that a proposal is not treated as an event so much as a service item. And the garden path back to the resort — walked hand-in-hand at 11 p.m., the lamps still flickering in the pools — gives the moment a coda that restaurants in buildings cannot. Book six to eight weeks ahead for a pool-edge table and mention the occasion at the time of booking.

Signature Dishes

Begin with the dim sum selection — the lobster and prawn dumplings are the dish to order first. The yellowtail sashimi with jalapeño is a clean opener. Move to the steamed sea bass with ginger and soy, or the black cod miso, for mains. The wagyu rib-eye with black pepper sauce is the meat dish of the menu. The Hong Kong-style crispy duck is the order for a table that wants theatre. Vegetables are handled carefully; the wok-tossed bok choy with garlic and chilli is the best side. For dessert, the chocolate sphere — cracked open tableside with warm sauce poured over it — has become the photograph most guests take home.

What to Know Before You Go

Eauzone is inside One&Only Royal Mirage on Al Sufouh Road, a twenty-minute drive from Downtown and ten from the Marina. You do not need to be a hotel guest. Dress is smart resort — jackets welcome but not required; shawls recommended in winter as the pavilions are open-sided. Reservations are essential and should be made as far ahead as possible for weekends. If proposing, mention it in the booking note and request pool-edge seating. Valet parking at the resort main entrance is straightforward. Service is paced slowly by design — plan for three hours minimum.
