HANNO

HANNO occupies a listed 16th-century canal house on Hippolytusbuurt, directly alongside the Oude Delft canal. The restaurant opened in 2011 with a single operating principle — there is no fixed menu. The kitchen decides each morning what it will serve that evening based on what it bought at the market, and diners are served four courses at €65 without knowing in advance what is coming.

The kitchen confirms allergies and dietary preferences at the reservation stage; beyond that, the meal is a surprise. The format has given HANNO an unusually consistent return-diner rate — regulars come back specifically not knowing what they will be served. The rotation is broadly modern European with Dutch and Mediterranean influences.

The dining room runs across two levels. The canal-level ground floor seats 40 at a mix of two-tops and a 10-seat communal banquette. The first-floor room seats 24 at three long tables and is often used for private bookings. Both rooms look onto the Oude Delft canal; the first-floor view across the Nieuwe Kerk tower is the better of the two.

Wine pairings at €45 are developed each morning alongside the food. The list rotates daily and leans toward small natural-wine producers — Austria, Slovenia, and Ardèche feature regularly. A non-alcoholic pairing at €25 is available.

HANNO is Delft's most interesting first-date restaurant. The no-fixed-menu format removes the menu-deliberation awkwardness, the €65 per-person price point is proportionate for a first meeting, and the canal-facing dining rooms are genuinely beautiful at dusk. For team dinners and birthdays, book the first-floor room (minimum 12 people) — the format creates a shared experience rather than individual menu decisions.
