The House
La Maison 1888 sits in a dedicated three-storey building at the north tip of the Son Tra peninsula, twenty minutes from central Da Nang by the resort's private funicular. Bill Bensley designed it as a fictional French family mansion, the home of an invented Madame de la Maison: trompe-l'œil staircases, painted ceilings, a dessert library on the top floor, the South China Sea in every window. Pierre Gagnaire created the menu when it opened; the three-Michelin-star Christian Le Squer guides it now. In 2024 it became the first restaurant in central Vietnam to earn a Michelin star, and it kept the star in 2025.
The Kitchen
The cooking is contemporary French, served as a set menu rather than à la carte. The signature is the Standing Spaghetti: strands stood upright, filled with a black truffle cream and ham, finished with a chanterelle cream poured at the table. It is a Le Squer trademark, and it is the dish to judge the kitchen by. The set menus run around 5 to 6 million VND a head, roughly US$200 to $240, before wine, and the cellar is one of the deepest in Vietnam. This is a one-Michelin-star kitchen doing one-Michelin-star work; the spectacle around it is extra.
The Room
There is no room in Vietnam like it, and that is the point and the warning. You arrive by funicular, climb through three floors of invented French history, and eat under painted ceilings with the sea below. Service is formal and paced to the theatre; dinner is a long evening, not a quick meal. Dress is elegant, a jacket encouraged. Dinner only, and non-hotel guests must reserve the funicular as well as the table.
Best for a Proposal
This is the room most people propose in on this coast, and the staging earns it. The funicular ride up the peninsula, the Bensley fantasy mansion, the sea from every window, and a Michelin kitchen do work no other restaurant in the country attempts. Ask for a window table, tell the staff in advance, and let the set menu run. For a proposal where the setting has to carry the night, nothing in central Vietnam comes close.
Not For
Not for a casual night or anyone who resents spectacle — this is a resort fine-dining production with a funicular, a set menu, and a bill to match.
