About LeMontBlanc

LeMontBlanc is the gastronomic restaurant of LeCrans Hotel & Spa — a chalet-style Relais & Châteaux property at 1,640 metres above the Crans village, opened in 2008 and currently run by the Burrus family — and the most architecturally striking of the Crans-Montana hotel restaurants. The dining room features full-height picture windows facing south to the Mont Blanc massif (visible on a clear day, eighty kilometres away across the Rhône valley) and a single open-flame kitchen at the back of the room.

Chef Pierre Crepaud took the kitchen in 2014 and has held one Michelin star uninterrupted for over a decade. His cuisine is contemporary French-Alpine with deep regional sourcing. The seven-course tasting rotates seasonally; signatures include a hand-cut Lake Geneva fera tartare with horseradish butter and Rhône caviar; a slow-roasted Valais lamb shoulder with thyme and a juniper jus; a smoked Bisse char with green tomato confit and basil oil; the famous 'Valais Apricot Tart' that uses the protected-AOP Valais apricot and is the canonical Valais dessert.

The wine list is one of the deepest Valais cellars in any Crans-Montana restaurant — 1,400 references with serious depth on Valais smallholders (Chasselas, Petite Arvine, Cornalin, Heida, Humagne Rouge), a respectable Burgundy and Champagne section, and an Italian Alpine programme that runs the Aosta valley appellations no other Crans cellar carries. Sommelier Yann Lehmann runs the floor and the pairing flight at CHF 165 is the best Valais-led wine match in any Swiss Alpine restaurant.

The dining room holds thirty-six covers across twelve tables; the captain rotates the room and the chef does a chef's-table walk before the cheese course. Service is family-run — the Burrus family rotate the floor, the captain has worked the property since 2010, and the kitchen pacing is unhurried. The hotel itself is fifteen rooms; most diners are overnight guests which lets the kitchen run without watching the clock.
