Colony Clubhouse & Grill is the Grand Hyatt Kochi Bolgatty's principal grill restaurant, set on the upper level of the resort with a continuous view across the Vembanad Lake to the Cochin city skyline. The cooking is international grill and seafood with a clear focus on serious meat. The kitchen runs a USDA Prime and Wagyu programme alongside a careful Indian beef and lamb selection, plus the lake-view seafood angle that the Bolgatty position demands — the Cochin tiger prawn, lobster, the Arabian Sea snapper and seer fish, all cooked over wood and binchotan. Sides are restrained and accurate; the cocktail menu and the Champagne pour are the right length for a deal-celebration first round.

The wine programme runs to roughly 120 references with a confident international spine — strong Italian and French reds, a useful New World programme, a serious Champagne selection and the single-malt cellar that Indian executive diners will inspect. The room handles a wine-list discussion with senior visiting clients without turning it into theatre.
