About Hypha

Hypha opened on Northgate Street in 2022 and earned a Michelin Green Star in 2023 — the sustainability-focused recognition the Michelin Guide awards alongside its traditional star system. It is the second Green Star restaurant in the north of England (after Moor Hall) and the only one in Chester. The name — hypha, the branching filaments that make up mushroom mycelium — signals the kitchen's obsession: fermentation, fungi, and entirely plant-based fine dining.

Chef Oliver Hodgson worked at Sticky Walnut and Restaurant Hywel Jones before opening Hypha with a single goal — to prove that vegan cooking could compete with any animal-protein kitchen at the tasting-menu level. The eight-course tasting menu (£85) rotates bi-monthly and uses produce from a dedicated market garden in Kelsall, wild-foraged herbs from the Forest of Dean, and ferments (misos, kvasses, shios) aged in-house for up to 18 months.

Signature plates include a koji-aged celeriac with truffle reduction that reads as meat on the palate; a tomato that has been confit-dried-reconstituted three times and arrives with a single drop of olive oil and flaked salt; a wild-mushroom risotto made with fermented barley instead of arborio rice; and a chocolate-miso dessert that converts even skeptical diners. The wine pairings (£60) are all natural and organic and are genuinely excellent.

The dining room seats 32 across a minimalist contemporary space — unpolished oak tables, raw-plaster walls, Japanese ceramics. Service is quiet and knowledgeable; the sommelier will walk vegans-curious diners through the menu without condescension. This is the birthday dinner for anyone with a dietary preference the standard fine-dining circuit still fumbles.
