About Cocina de Autor
Cocina de Autor is the gastronomic restaurant of Grand Velas Los Cabos. A five-star all-inclusive resort on the Carretera Transpeninsular halfway between Cabo San Lucas and San José del Cabo, opened in 2016. And is the most technically accomplished tasting-menu kitchen in Baja California Sur. The restaurant runs under consulting from Sidney Schutte, the Dutch chef who held two Michelin stars at Librije's Zusje in Amsterdam.
The cuisine is contemporary international with Mexican-Pacific sourcing. The eight-course tasting rotates seasonally; signatures include a Mazatlán-shrimp aguachile with passionfruit and biquinho pepper; a slow-cooked Baja-coast lamb with cassava and Mexican mole; a hand-rolled tapioca pasta with Pacific snapper; the famous 'chocolate course' that uses single-origin Tabasco-state Mexican cacao.
The wine list runs to 700 references with serious international coverage. Pairings at USD$140 are heavily international-led.
The dining room is the most architecturally distinctive luxury-resort dining room in Cabo. Concrete-and-glass shell, hand-carved Mexican-stone walls, a single open-pass kitchen at the back. Service is precision-international.
