About Karkalla
Karkalla is the Indigenous-Australian dining room of chef Mindy Woods. A proud Bundjalung woman of the Widjabul Wia-bul clan, born in the Northern Rivers region. Opened in 2022 in the heart of Byron Bay on Bay Lane and is the most internationally recognised Indigenous fine-dining destination in Australia. The restaurant is the chef's passion project: a deliberate exploration of indigenous Australian-native ingredients in a contemporary fine-dining format.
The cuisine is built around indigenous Australian native ingredients. Signatures include a hand-cut Northern Rivers macadamia tartare; a slow-cooked Bangalow lamb shoulder with bush tomato and lemon myrtle; a wood-fired Pacific-coast barramundi with finger lime and saltbush; a hand-rolled native-bushfood pasta with native pepper-leaf; the famous 'wattleseed pavlova'. A contemporary Indigenous take on the canonical Australian dessert.
The wine list runs to 250 references with deep mainland-Australian smallholder coverage and a respectable Northern Rivers section. The cocktail bar runs a serious Australian-native-spirits programme. Distilled with native botanicals (lemon myrtle, finger lime, native pepper-leaf, wattleseed).
Service is family-run. Woods herself runs the kitchen and walks the room before the cheese course; the captains rotate from a year-round Indigenous-staff pool.
