Tato Giovannoni, Argentina's most celebrated bartender, opened Florería in 2013 with a concept as precise as his technique: a cocktail menu organized by the national origins of the immigrants who shaped Buenos Aires between 1900 and 1920. The sections read like a history of the city — Italy, Spain, France, Poland, England, and a local section where all these influences are synthesized with native Argentine botanicals, yerba mate, and grappa. To drink through the menu is to understand how this city became what it is. Giovannoni's preparation is rigorous: house-made vermouths, fat-washed spirits, locally foraged herbs, fermented preparations that take weeks to produce.
