About Don Carlos

Don Carlos opened in 1970 on the corner of Brandsen and Del Valle Iberlucea in La Boca, directly across from La Bombonera, Boca Juniors' stadium. There is no menu: the namesake parrillero, Juan Carlos ‘Carlitos’ Zinola — working alongside his wife Marta Venturini and daughter Gaby — sizes you up and sends out whatever the kitchen is cooking. The format has earned a cult following, including a memorable visit from Anthony Bourdain.

The Kitchen

What arrives is a rolling parade: provoleta, blood sausage and empanadas to start, then cuts of beef off the parrilla, with homemade pastas and grilled vegetables in between, and a famous flan mixto to close. You pay a flat per-person price for the whole sequence — roughly US$30 a head — which makes it some of the best value in the city.
