Arany Kaviár — the Golden Caviar — has occupied its position in Buda's Castle District since 1888, making it one of the oldest continuously operating luxury restaurants in Central Europe. The restaurant was founded during the Austro-Hungarian Empire at its peak, when a restaurant dedicated to caviar and the culinary traditions of the Russian imperial court would have seemed natural in a city that stood at the centre of a European superpower.
The dining room reflects its origins: gilded surfaces, deep burgundy fabrics, heavy silverware, and a hush that pre-dates the concept of ambient noise. The caviar programme — beluga, oscietra, and sevruga from responsible aquaculture — is served with blini, crème fraîche, and the accompaniments that define correct caviar service. The kitchen also produces Russian imperial-influenced dishes: beef stroganoff prepared with precision; a borscht of remarkable refinement; pelmeni that bear no resemblance to the frozen variety.
The wine list includes Russian, Georgian, Hungarian, and French bottles. Arany Kaviár operates in the tradition of the great European luxury restaurant as it existed before minimalism decided that restraint was a virtue.
