About Dilsk
Dilsk sits in the basement of Drakes Hotel, directly on Brighton seafront a few hundred yards east of the Palace Pier. It is chef-patron Tom Stephens' first solo venture — he spent four years at 64 Degrees under Great British Menu winner Michael Bremner, preceded by pastry and head-chef positions at Pied-a-Terre and Fera at Claridges under Simon Rogan. Front-of-house partner Maddy Riches co-runs the restaurant and manages the wine list.
The cooking is modern British built around South Coast sourcing — Rye Bay scallops, South Downs lamb, Sussex-grown vegetables, coastal foraged sea-aster, sea purslane, oyster plant. The ten-course tasting menu at £95 is one of the best-value serious dinners on the south coast; the five-course at £55 (lunch and weekday dinner Monday–Thursday) is an even harder proposition to argue with. The wine pairing is £55 for five courses, £95 for ten.
The dining room seats thirty across a single basement hall. The atmosphere is elegant-relaxed — restrained walnut panelling, soft lighting, jazz on the system — and the room avoids the fine-dining formality that often alienates a first-time tasting-menu diner. The Michelin Guide currently lists Dilsk as Selected (the entry-level recommendation); the pace of ambition and refinement suggests the next step is imminent.
Reservations: the shorter £55 menu is available lunch and dinner Monday–Thursday and is usually available 5–7 days ahead. The £95 ten-course is Friday–Saturday evenings and books 2–3 weeks ahead. Sunday is closed. This is one of the few Brighton rooms where a solo diner is welcomed without ceremony — Maddy runs the room with genuine warmth.
Why It's Perfect for First Date
Seafront basement, ten courses, £95, and a cooking pedigree drawn from Pied-a-Terre and Claridges — Dilsk is how a first date in Brighton is done properly. The room is intimate, the tasting-menu format removes the decision stress, and the price point is right for a serious evening that doesn't look like an over-commitment. Book the seven-course middle option if unsure.
