In 2010, Edwin Zoe brought his mother Anna from Taiwan to Boulder and opened a twenty-seat noodle counter on 10th Street. The concept was simple and the execution was serious: from-scratch cooking using organic wheat noodles, cage-free eggs, all-natural meats, and the Taiwanese street food tradition that Anna Zoe had been cooking for most of her adult life. More than a decade later, Zoe Ma Ma has moved to a larger space on Pearl Street, earned a Michelin Recommendation, and become one of the most reliably extraordinary cheap meals in Colorado. The concept has not changed.

The hand-pulled noodles are the foundation. Made fresh in the kitchen each day, they have the texture that only comes from hand-working. A slight resistance at first, then a yield that absorbs sauce rather than shedding it. The dan dan noodles, with their ground pork, sesame paste, and Sichuan pepper, are the benchmark order and the standard against which every other dan dan noodle in Boulder is measured unfavourably. The potstickers are made to order; the bao are steamed fresh; the daily specials — Sichuan braised beef soup noodles, pork belly rice plates, rotating preparations that depend on what Anna wants to cook that day — are the reason regulars develop the habit of asking the counter staff what's new before ordering the usual.

The format is counter-service and fast-casual, which means no reservations, no elaborate service, and no wine pairing.
