The concept is built around what the restaurant calls Food Migrations — a culinary philosophy that tracks how ingredients, techniques, and flavours move across cultures, time zones, and continents, and asks what happens when Colorado's exceptional seasonal produce becomes the canvas for that journey.

The open-kitchen format is not incidental. Watching the chefs work behind the counter is part of the experience — the theatrical energy of a kitchen in full flow, the smells arriving ahead of each course, the sense that food is being made for you specifically rather than assembled in a room you cannot see. Brunch is served on weekends from 10am, lunch runs Tuesday through Friday, and dinner is available seven nights a week. Reservations are recommended for dinner; walk-ins are accommodated at the bar. The kitchen takes pride in accommodating dietary preferences with the same creativity applied to the main menu — a vegetarian or gluten-free guest is not a problem to solve but an invitation to cook differently.
