About Le Saint-James

Le Saint-James stands on the hill at Bouliac, across the Garonne from Bordeaux, in a building the architect Jean Nouvel wrapped in rusted-steel louvres in 1989 to echo the tobacco-drying sheds of the region. After more than two years of renovation it reopened on 14 May 2026 with eleven rooms, five suites, a cooking school, and two restaurants: the gastronomic table and a bistronomic room called Orama. The view over the vineyards to the city is the reason the dining room faces the way it does, and at dusk it is the whole point of booking the window.

The Kitchen

Chef Mathieu Martin joined Le Saint-James in 2012 and became its fourth head chef in January 2020, holding a Michelin star here before the building closed for works. His cooking leans on Nouvelle-Aquitaine producers — Gironde caviar, Bazas beef, Garonne fish — plant-forward and precise rather than heavy.
