About Arii Moana
Arii Moana is the flagship dining room of Four Seasons Bora Bora. The luxury resort on Motu Tehotu, opened in 2008 with a deliberate Mediterranean-meets-Polynesia architectural concept. And runs the casually elegant Mediterranean programme with classics from the Mediterranean region adapted to Pacific-Polynesian ingredient sourcing.
The cuisine is contemporary Mediterranean with Polynesian sourcing. Signatures include a hand-rolled tagliolino with Polynesian shrimp; a slow-cooked Polynesian lamb with rosemary and Niçoise olive oil; a wood-fired Polynesian mahi-mahi with samphire; a Polynesian-tuna tartare with finger lime; the famous 'soufflé Grand Marnier'.
The wine list runs to 600 references with deep French Champagne, Burgundy and Bordeaux coverage.
The dining room and overwater terrace together hold ninety-six covers; the kitchen times the dessert course with the sunset over the Mt Otemanu volcano.
