Franziskanerstuben sits in a narrow lane behind the Franciscan church, away from the main square's tourist traffic, and is widely held to be the everyday Stube most Bolzano locals use. It has none of the formal weight of Vögele or Löwengrube — just a small bar at the front, two wood-panelled rooms, a chalkboard of daily specials, and a regular crowd that turns over at lunch.

The cooking is Tyrolean in its simplest, most honest form. Speck and Schüttelbrot to start; canederli in broth; goulash with polenta; Wiener schnitzel done properly; Tirtlan stuffed with sauerkraut or spinach. Portions are large, prices are remarkably fair, and the Stube's house Lagrein is poured by the carafe.

The bar at the front is one of the friendliest places in Bolzano for a solo lunch — the locals are happy to chat, the menu is in three languages, and a glass of Schiava with a plate of speck and a bowl of barley soup is one of the better-value Alpine meals you will find.
