Skykitchen sits on the 14th floor of the ANDEL's hotel in Lichtenberg — an East Berlin neighbourhood that has not been gentrified out of character. The view from the panoramic windows includes the particular urban texture of the former DDR: prefabricated apartment blocks, industrial infrastructure, and the slow greening of a city that is still, three decades after reunification, in the process of becoming something new.
Chef Alexander Koppe has developed a cuisine simultaneously specific to its location and internationally fluent. Ingredients from the Brandenburg hinterland — game, root vegetables, dairy from small farms — are prepared with technique informed by French classicism and inflected with the flavours of Central and Eastern Europe. A schmaltz-enriched preparation that would have appeared on a DDR table arrives in a form that would not embarrass a Paris bistro.
