About Ling Long

Ling Long is the Beijing flagship of Taiwan-born chef Jason Liu, who opened it in 2019 and, before turning thirty, won the Michelin Guide's young chef award and a one-star rating in the 2022 Beijing guide. In 2026 the kitchen ranked No. 9 on the Asia's 50 Best Restaurants list.

Liu cooks a single modern Chinese tasting menu built around four themes — umami, tradition, localization and memory. The most quoted plates are a blue lobster set in Shaoxing wine jelly and a bouncy fish maw napped in a parmesan-and-orange sauce under a crisp cheese wafer, the parmesan made for the restaurant in Beijing.
