Casa de Pasta was opened by a Mozambican chef who trained in Italy and returned home with a conviction that Italian technique applied to the local marine harvest would produce something special. He was right. The pasta here — tagliatelle, pappardelle, and gnocchi — is made fresh daily in quantities that regularly sell out.
The signature dish is seafood linguine with tiger prawns, clams, and crab from the channel, dressed simply with garlic, white wine, and parsley. It is a dish that could appear on a good Italian restaurant's menu in Milan and not be out of place. That it is being eaten in Vilanculos, with a dhow visible from the window, is an additional pleasure.
The risotto — made with arborio rice imported from Italy and cooked with the local crayfish and saffron — takes forty minutes and must be ordered in advance. It is worth both the planning and the wait.
The wine list leans Italian, with a reasonable selection of Sicilian and Tuscan bottles alongside South African alternatives. The tiramisu is made correctly with mascarpone, savoiardi, and good espresso. This much authenticity, in a small Mozambican coastal town, deserves considerable respect.
