Menu Gordon Jones has operated on a single, radical premise since it opened: you pay a deposit, you arrive, and you eat what the kitchen has decided to cook that day. No menu is shown. No choices are offered. Every course arrives as a surprise, and in chef Gordon Jones's hands, every course justifies the gamble.

The cooking is Modern British with a maximalist streak — Jones's menus are dense with ideas, technical ambition, and unexpected flavour combinations that somehow cohere into a coherent whole. Six courses at dinner, built around whatever arrived from suppliers that morning: a scallop with a bergamot foam; a piece of aged beef served with a sauce whose complexity you spend the walk home trying to decode; a dessert that begins with a petit four and ends somewhere entirely unexpected.

The small room in Wellsway seats just thirty-two, and the atmosphere is deliberately intimate — Jones often comes out of the kitchen to discuss the courses, and the sense of shared discovery among the tables is unlike anything in more formal dining rooms. If you need to know what you are eating before you order it, this is not your restaurant. If you trust a chef, it is one of the best evenings in Bath.
