Swept Away at Alila Villas Uluwatu is positioned on the edge of the Uluwatu cliff, 100 metres above the Indian Ocean. The restaurant terrace extends over the cliff face on a cantilevered platform, and the dining room transitions from an enclosed interior to an open terrace that the kitchen manages seamlessly across the evening. The design is the work of WOHA architects, the Singapore practice behind some of Southeast Asia's most admired resort buildings, and it shows.
The menu is international in its classical references — French technique, Japanese precision in the fish preparations, Balinese spicing integrated at every stage rather than deployed as decoration. The signature Uluwatu prawn, sourced from the waters visible from the dining terrace, is prepared three ways in a single course: raw with kaffir lime, grilled with a coral butter, and in a bisque that concentrates the prawn's flavour to its theoretical maximum. The dish takes forty minutes from order to arrival.
The Alila operational standard is impeccable. The hospitality staff are trained to the same level as the kitchen — a restaurant where the front of house matches the kitchen in ambition is rarer than it should be. Service at Swept Away is invisible when it should be invisible and present when it needs to be present.
The Uluwatu location requires planning. The restaurant is forty-five minutes from central Seminyak, and the Alila concierge team manages transfers for non-resident guests. The journey through the Bukit Peninsula's limestone landscape and past the historic Uluwatu Temple is itself part of the experience.
