About Pearl Bali
Pearl Bali opened in 2023 inside the Apurva Kempinski's clifftop pavilion as Mauro Colagreco's first project in Asia — the chef behind Mirazur, the world-No.1-ranked French restaurant of 2019. The dining room is suspended on the cliff edge above Nusa Dua's southern coast, with seventy degrees of unbroken Indian Ocean and the day's last light streaming through twelve-foot floor-to-ceiling glass.
The menu draws from Colagreco's Mirazur philosophy — the four-elements concept, hyperlocal seasonal ingredients, ceremonial Mediterranean technique — translated through Indonesian growing seasons. Standouts include a salt-baked lobster from Sumbawa, foie gras with Bali pomelo and ginger flower, an aged-duck breast over fermented kemiri, and a closing dessert of local cacao and tamarillo that may be the most photographed plate on the island.
The wine programme is Colagreco's pride — over four hundred labels, with serious depth in Provence and Burgundy and an Indonesian section that shows the cellar takes the local industry seriously. The cocktail bar runs a separate apéritif programme; the negroni list alone fills its own card.
Bookings open eight weeks ahead via the resort website. Sunset seating (6:00 PM in dry season, 5:30 in monsoon) is the prized slot and books out first. Dress is smart-casual to evening — long-sleeve shirts, closed shoes for men. Proposals are common here; the team will coordinate flowers, ring placement and timing if forewarned at booking. Allow three hours for the full menu.

Engagement-night Bali has one obvious answer. Pearl combines a cliffside sunset, a Mirazur-trained kitchen, and a service team rehearsed in the moment — flowers timed to the dessert, a discreet pause for the question, a Champagne pour that lands on cue.
