The Room
Mama San opened on Jalan Raya Kerobokan in Seminyak in 2010. Will Meyrick to Edinburgh-born, Asian-cuisine specialist. Built the dining room around a 1920s-Shanghai aesthetic: green banquettes, dark timber, brass fixtures, low chandeliers, that warm Asian-supper-club glow. Fifteen years later the room remains the definitive modern Southeast Asian flagship in Bali.
The dining room expanded over the years to include an open-kitchen wood-grill section, a chef's counter for Thai-leaning omakase, and an upstairs Supper Club for private group dinners. Service is brigade-Asian with Bali floor warmth. Mama San is part of the Will Meyrick group (Hujan Locale and Sangsaka in Ubud, plus Sarong in Seminyak).
The Food
The kitchen runs a serious modern-pan-Asian programme: dishes from Malaysia, Singapore, Thailand, Cambodia, Indonesia, Vietnam, China and India, executed with technique and a refusal of the gringo template. Signature plates include the wood-fired king prawns with kaffir lime, the fiery thigh chicken in red curry, the wood-fired pork tomahawk, and the chef's-counter Thai-leaning omakase.
Wine programme is broad and Asian-cuisine-friendly. Australian-Riesling-heavy with serious Burgundy and Champagne benches. Cocktails run classical with a Southeast Asian-spirits bench (mezcal-arak, kaffir-gin, lemongrass-pisco).

Birthday: Mama San's main dining room is the Seminyak birthday venue for the diner who wants the night to register as Asian-supper-club-cinematic. The booth at the back-left is the seat to request.
Team Dinner: The Supper Club upstairs seats up to 40 and runs a set Southeast Asian menu. Perfect for the corporate dinner that wants an Asian-cuisine experience.
First Date: Mama San's bar is one of Seminyak's better first-date seats. The cocktail programme is the icebreaker, the Thai omakase is the conversation, the dining room is the third hour.
