Uchi is the first booking. Tyson Cole, a James Beard winner, will run a vegetarian omakase where you hand the kitchen the meal and the sushi chefs compose around vegetables, tofu and seasonal nigiri rather than fish. The original South Lamar room is the one to book for it. It is the most interesting vegetable tasting in the city precisely because the format is built on trust. Request the vegetarian omakase when you reserve so the counter can plan the run of courses.
